Recipe: Nectarine and cucumber salad with tahini-lemon dressing

Summer is here and with it the time for refreshing salads! I particularly like the combination of nutty, sweet and tangy-sour in this recipe. But my favorite ingredient is the fresh peppermint!
Ingredients per serving:
- 1 nectarine, in medium sized pieces
- 1/4 cucumber, in medium sized pieces
- 3-4 stalks of peppermint, leaves
- 3 tbsp tahini
- 1/4 lemon, juice only
- Pepper
- 1/4 tsp salt
- Optional: roasted pistachios
Preparation:
- Mix the nectarine, cucumber and mint in a bowl.
- Add the tahini, lemon juice, pepper and salt, taste and season if necessary.
- Optional: Sprinkle roasted pistachios over the salad.
Food styling tips:
- Instead of serving the salad in a bowl: Take a slightly larger plate, e.g. the flat plate from our Speckled Beige collection, and leave enough space to spread some tahini decoratively over it. Arrange the salad in a line on one side of the plate (not exactly in the middle).
- No symmetries: Deliberately do not sprinkle the pistachios evenly everywhere, this creates a nicer picture.
- For photos: Leaving a few ingredients around the plate creates excitement and makes the picture "livelier". If you want a good exposure for your photo, you can place the table with the plate directly next to a large window and take the photo from above so that the light comes into the picture from above.
